Fun fact about me that you may not know, I was once a chocolate makes, like full on death by chocolate. It is how I made extra money when the kids were little and I was still learning my photography. My mom and I would do craft shows and take orders. It was so much fun you guys! I want to share what I know.
Let’s talk chocolate. Everyone wants to just go to Wal-mart and grab some melting chocolate, but the magic is in the chocolate you choose and quality matters. Not all chocolates are created equal. This is my favorite brand, Merckens is the brand I love, I have used it for years. It melts super easy and has amazing flavor. You can even get it on Amazon!
Things to watch for with chocolate.
If it is dusty or has gradient colors, it is either old or has melted at some point. You want fresh chocolate. If you order it and it looks dusty, send it back. It will not melt as well and will have a meh flavor.
When working with the chocolate, make sure all your tools on clean and dry. Chocolate does not like to be wet or greasy – if it touches anything greasy or dirty in the melting or molding process, it will look odd when it dries and even have holes.
Get good chocolate!!!! Trust me, it is AMAZING!
USE GLOVES – If you are making these as gifts, buy a pair of cotton gloves to handle the chocolate with so that you do not leave fingerprints. You can grab some on Amazon. (of course you can)
Now molds, I love simple plastic molds but now they have silicone which is amazing. I used this MOLD to make mine. I have never used one like this before, it was kinda weird. They held their shape really good, but were hard to get out of the mold. I am trying these MOLDS next, to see if I like them any better. Updated to add – I love the silicone ones…. I now own 3 of those!

Chocolate also takes on the flavor of what is next to it – so if you have your Merkhans stored next to your onions, your chocolate will now be onion flavored! LOL
